French Herb Roasted Chicken is a tender and aromatic dish perfect for a Sunday roast, infused with the flavors of thyme and rosemary.


Ingredients

  • 1 whole chicken (about 4 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken inside and out and pat dry with paper towels.
  3. Rub the chicken with olive oil, then season generously with salt, pepper, thyme, and rosemary.
  4. Place the lemon quarters and crushed garlic inside the cavity of the chicken.






Notes

  • For extra crispy skin, increase the oven temperature to 425°F (220°C) for the last 15 minutes of cooking.
  • Serve with roasted vegetables for a complete meal.
